Ingredients

320 g mochiko sweet rice flour/glutinous rice flour

200 g brown sugar

2 tsp baking powder

2 g salt

400 g (13.5oz) coconut milk

2 large eggs

80 g smooth black sesame paste

crunchy black sesame paste (my favorite is Rooted Fare’s!)

Directions

Step 1

1. Preheat the oven to 350F. Grease the muffin tin with coconut oil or baking spray.

Step 2

2. Mix the smooth black sesame paste, eggs, coconut milk, brown sugar, and salt together in a large bowl til smooth.

Step 3

3. Add the glutinous rice flour and baking powder to the wet ingredients and mix til well combined.

Step 4

4. This recipe serves around 12-13 muffins. Fill each muffin cavity mostly full (3/4 way).

Step 5

5. Spoon a small amount of crunchy black sesame paste on top of each and then swirl it gently with a toothpick.

Step 6

6. Bake the muffins for 41-43 minutes (toothpick test). Let it cool for 30 mins before eating!
